Dough for kayi kadubu ( kaara and sihi both )
Ingredients
Rice—1 cup
Water —enough to soak
Ghee- 1 teaspoon
Urad dhal soaked and ground to paste—1/2 cup or maida —1 tablespoon
Method
To prepare fresh rice power:
Wash rice in water and soak for minimum 4 hours or overnight.
Wash rice in water and soak for minimum 4 hours or overnight.
Drain the water in a colander .
Spread the drained rice on the white muslin cloth or towel in shade for 1/2 hour.
Grind this rice in a mixer to a fine powder. Sieve it through a fine sieve.
Now rice powder is ready to use
Alternative: you can also buy rice powder from grocery store which is called 'toleda akki hittu'
Method for making dough
Rice flour —1 cup
Water —2 cups
Ghee or oil—1 teaspoon
Ground urad dhal paste or maida
Boil water in a thick bottomed kadai on medium heat adding ghee and urad dhal paste.
Mix well .
When water starts boiling reduce the flame to low, fold rice flour slowly stirring all the time.
Cover with a lid and cook in very low flame for 8 to 10 minutes. Then turn off the heat.
Transfer to a wet muslin cloth and knead the dough well while still warm.
Or you can transfer to a flat big, plate knead the dough by dipping your hands in ghee or oil until the dough becomes soft.
Cover the dough with the wet cloth to avoid drying.
Divide the dough and make small lemon sized balls. Now its ready for making kadubus (sweet or savoury)
