Watermelon rind dumroot ( halwa)
Ingredients
Watermelon ( kallangadi hannu ) rind— grated peel —2 cups
Sugar—1/4 cup ( i have used cane sugar)
Ghee—2 tablespoons
Cashews nuts (godambi //kaju)—1 tablespoon
Raisins (drakshi//kishmish )—1 tablespoon
Cloves ( lavanga)—4 to 5
Kesari ( saffron strands)—1 big punch
Cardamom powder ( ellaki//elaichi)—1 teaspoon
Method
After cutting the fruit, take out the rind.
Peel the skin and grate the watermelon rind.( white part )
Firstly heat ghee in a kadai or pan,once hot enough add raisins and cashews .
Fry till cashews turn brown in colour and raisins puffs up.
Take out of pan and keep it aside.
Next in the same kadai add cloves, and add grated watermelon along with water and cook on medium heat stirring in between.
Close with a lid ,cook for 8 to 10 minutes or until watermelon turns soft and cooked.
Next add sugar and mix well.
Add in kesar strands.
Keep stirring in between and cook until it blends and water evaporates.
Now add the fried cashews,raisins,and cardamom powder.
Mix well together.
Now dumroot is ready to serve.
You can enjoy delicious dumroot hot or cold.
