Pulao masala powder
Ingredients
Coriander seeds ( kothambari bija// sabut dhania)—1/2 cup
Cumin seeds (jeerige//jeera)—1/2 cup
Bay leaves (pulao leaf// tej patta)—5 to 6
Cloves (lavanga)—2 tablespoons
Mace (japatre)—4 to 5
Black cardamom—4
Fennel seeds ( sompu kaalu//saunf)—1 tablespoons
Marathi moggu(kapuk buds//Indian capers)—1 tablespoon
Nutmeg ( Jai kai// jaiphal)—2
Star anise ( chakra moggu// chakra Phoolan)—1 tablespoon
Green cardamom ( elaichi//elakki)—10
Cinnamon sticks ( dalchini)—7 to 8 sticks
Black pepper corns ( kaalu menasu)—2 tablespoons
Kallu hoovu ( black stone flower //patthar phool)—1 tablespoon
Method
In a dry pan,add all the ingredients.
Dry roast them on a very low flame for 4 to 5 minutes,stirring continuously until it gives nice aroma.no need to wait for colour change.do not burn the ingredients,as this makes the masala powder bitter.
Remove from heat and keep it aside .
Let it cool completely.
Once cooled transfer them to a clean dry mixer grinder jar,grind the mixture into a fine powder.
Let the powder cool to room temperature.
Store it in a airtight container or glass container.
