Instant idli
Ingredients
Rice flour ( akki hittu )—1 and 1/2 cup
Uppittu rave ( sooji//semolina)—1cup
Mosaru (curd//dahi)--1 cup
Water—1 /2 cup or little more
Salt—1 teaspoon or as per taste
Eno fruit salt—1 sachet ( 5 grams)
Oil —to grease idli plates
Idli cooker or steamer and idli plates
Method
In a mixing bowl,mix rice flour,rave (sooji) .
Add curd and water and mix well making sure there is no lumps or whisk it well till you get a smooth batter.
Cover with a lid and keep it aside for 10 minutes.
Mean while, heat water in idli cooker on medium flame .
Grease the idli plates and keep it ready
After ten minutes mix the idli batter adding salt.
Finally add eno fruit salt and add a 1/2 teaspoon of water over to activate it.
Stir the batter lightly.
Pour a laddle full of batter into idli moulds and then place it in the idli cooker.
Cover and steam for 10 to 12 minutes on medium flame ot till idlis are done.
To check if the idlis are cooked pierce a knife in it ,if it comes out clean switch off the stove.
Take out the plates and keep it aside ,and let it cool.
Then remove into a bowl.
Serve soft and fluffy idlis with chutney or chutney powder.
