Dosa premix powder( instant ) recipe
Ingredients
Rice powder ( akki hittu)—3 cups
Uddina belle (urad dhal// black gram)—1 cup
Avalakki (poha//beaten rice flakes)—1 cup
Kadale bele (channa dhal)—2 tablespoon
Toor dhal ( togari bele)—1 tablespoon
Menthya kaalu (methi dana//fenugreek seeds)—1 tablespoon
Chiroti rave( fine sooji// fine semolina)—1/4 cup
Salt—2 teaspoon
Method
Dry roast uddina belle in a pan,on medium flame,just for few minutes.
Do not let them change colour.
Then dry roast avalakki for few minutes.
Then dry roast,channa dhal,toor dhal,menthya kaalu separately for few minutes.
Roast each ingredient until they are warm to touch,that’s enough,
Transfer all the ingredients to a plate or bowl and let it cool completely.
Next mix them together and powder them in a mixer grinder jar to very fine powder .
You can grind them in batches to get fine powder.
Transfer to a wide bowl,add rice powder,chiroti rave,salt.
Mix everything well together.
Instant dosa premix powder is ready to use.
Store in an airtight container.
Method for making dosa.
Dosa premix powder—1 cup
Curd (mosaru//dahi)—1/4 cup
Water —as required ( around one and half cup or little less)
Now take dosa premix powder in a bowl,add curd.
Add water little by little and whisk the batter.
Make sure there are no lumps.
The consistency should be like dosa batter.
Cover and keep it aside for 30 minutes.
To prepare dosa
Heat iron tava or dosa skillet on medium flame.
Once’s hot enough grease the tava.
Now lower the flame to low and pour a laddle full of batter in the centre and spread in circular motion.
Sprinkle oil on the dosa and around edges .
Cover with a lid and Cook on medium flame,until dosa turns crisp and golden brown colour.
Remove the dosa from tava. And serve with chutney.
Serve hot.
