Iyengar bakery style khara buns

 


Ingredients


Milk—3/4 cup
Dry yeast—1 teaspoon 
Sugar—1 teaspoon 

Maida ( all purpose flour)—2 cups
Salt—3/4 teaspoon 

Onion (irulli//pyaz)—1 medium sized ( finely chopped)
Green chillies (hasiru menasina kayi)—3 small ( finely chopped)
Cumin seeds ( jeerige//jeera)—1 teaspoon 
Red chilli powder— 1 teaspoon 
Chilli flakes—1 teaspoon 
Curry leaves (karibevu//kadipatta)—2 tablespoon chopped 
Coriander leaves (kothambari soppu)—2 tablespoon chopped 
Dil leaves ( sabbasige soppu)—2 tablespoon chopped 

Butter—2 tablespoon 
Milk— 1/4 cup or as required 

Method 

Firstly warm milk ( in a microwave or on gas),add yeast ,sugar and mix well.
Cover and leave it aside for 10 to 15 minutes to activate  or until it becomes frothy.

(Note;; milk should be lukewarm not hot ,this is important step)

Next, in a large bowl take maida,salt and mix well 
Add in yeast mixture and mix well.

Then add in chopped onion,coriander,dil,curry leaves,jeera,chilli powder and flakes,green chilli.
Mix everything together well with your hands by squeezing it well.
 Add milk little by little continue to knead.

The dough will be sticky.
Then add butter and continue to knead.

Then transfer the dough on to a kitchen slab or floured surface and knead the dough for 12 to 15 minutes with your hand until the dough becomes non sticky and smooth. ( at this stage you can add 1 or 2 tablespoon of maida if needed)

( kneading the dough to form a non sticky and smooth is most important to get soft buns)

Next place the dough in a  greased  big bowl,covering with a lid or plastic wrap and keep it aside for 1 to 2 hours or until the dough doubles in size ( this stage is important)

Once risen,punch the the dough down to deflate the air.

Transfer to a kitchen table and divide into equal smooth balls.

Allow to rest for 10 minutes,covering with a moist cloth.

At this stage i have stuffed some aloo( potato) stuffing for some balls ( its just optional)

Place each ball inches apart in a baking tray lined with parchment or butter or aluminium foil.
Then brush each balls with milk .

Place the tray into the pre heated  oven and bake at 180 degree Celsius for 30 minutes or until bun turns to golden brown from top.

 Carefully Remove from oven,brush each bun with melted butter to get a shiny look.

Cool completely 
Enjoy with hot tea or coffee.
You can slice each bun in the middle and apply butter for extra taste.
