Peanut curd and raita

 



Ingredients

 Raw Peanuts ( ground nuts// kadale kayi bija)—-1/2 cup
Water —as needed ( 1 1/2 to 2 cups)
Lemon juice ( nimbe rasa)— 1 tablespoon or curd 

Method 

Wash and soak the peanuts in water overnight or  for 6 to 7 hours.
Drain water and rinse well again in water .
Transfer to a mixer grinder  jar ,add sufficient water and grind to smooth paste.
 Strain to get the thick milk.
Put the fibre back into mixy jar add little water and grind again and strain milk.
Repeat the process for three to four times.
You can strain through a muslin cloth to discard all fibre .( its optional).

Next take this white frothy milk in a thick bottomed pan and boil on medium flame stirring continuously.
When it starts boiling switch off the stove.
Let it cool completely to room temperature.

Once it’s cooled add the lemon juice and stir well.
Cover with a lid and keep it in a warm place to set.
Keep overnight or for 9 to 10 hours.
Once set keep it in refrigerator to set completely.

You can consume as it is or you can make raita adding finely chopped onions,tomatoes,cucumber,carrot,coriander leaves etc.
You can use this curd for any other recipes.
