Fresh peach chutney
Ingredients
Fresh peach fruits —chopped —1.6 kg fruit
Apple —2 —chopped
Fresh ginger( shunti )— 2 tablespoon grated
Star anise—1
Cloves (lavanga)—3 to 4
Black pepper corns (kaalu menasu)—1 teaspoon
Cardamom pods (ellaki//elaichi)—2
Dry red chillies—3
Cinnamon sticks( dalchini)—5 inches stick
Nutmeg powder ( jaiphal//jaikai)—1 teaspoon
Salt—one pinch
Sugar— 3 tablespoon
Ghee or oil—1 teaspoon
Method
Firstly wash the peaches and apples and peel the skin.
Remove the stone ( seeds) and cut into small cubes.
Take a thick bottomed large kadai or pan .
Sauté the red chillies,cinnamon sticks,cloves ,pepper corns,star anise ,cardamom pods for few minutes.
Then add chopped fruits,ginger grated,nutmeg powder,sugar,salt and mix well together.
Cook on low medium flame stirring from time to time.
Cook until tender and turns to jam like consistency,it may take up to 45 minutes to one hour.
After 45 minutes to one hour,remove from heat,allow to stand for 10 minutes.
Remove the cinnamon stick and discard it.
Pour the chutney to sterilised jars or bottles.
Let it cool completely.
Refrigerate the bottles.
