Mango pie



Ingredients 

Mango fruit — 2 big ( or 3 1/4  cups purée)

Sugar—1/2 cup
Cold water—3/4 cup
Gelatin powder—2 1/4 tablespoon 
Chilled heavy whipping cream—1/2 cup
Cream cheese— 4 ounce  ( room temperature) 
Salt—1 pinch

Pie crust ( pie dish)— 1

Method

Wash and peel the skin of mangoes and blend to fine purée in a blender or mixer grinder jar.

Pre heat oven to 200 C ( 400 F) 
Prick the pie crust with a fork.
Keep the pie dish to bake just for 5 minutes 
 Remove from the oven and let it cool completely.

Next take cold water in a mixing bowl.
In a small cup take 1/4 cup of water with the gelatin and  mix well.
Let it sit for few minutes to bloom.
Add sugar to the cold water and add the gelatin mixture.
Mix well.

Then whip the cream with a whisker or hand blender until medium stiff peaks forms.
Keep it aside.
 
Next pour  the mango purée over gelatin mixture and whisk well.
Mean while beat the cream cheese with a spoon or spatula until soft and smooth.

Add this to the mango puree,add salt,and whipped cream and gently fold everything together.
Blend until completely smooth .
Pour the mixture to the cooled crust and smooth out the filling.
Refrigerate for 5 to 6 hours or over night until completely set ( firm).
 
Slice and enjoy delicious soft chilled pie.
