Hotel style tomato onion chutney
Ingredients
Tomato—2 big chopped
Onion ( irulli//pyaz)—1 big chopped
Garlic pods (belluli//lehsun)—2 pods
Ginger ( shunti//adarak)—2 small pieces
Green chillies ( hasiru menasina kayi//hari mirch)—1 or 2
Channa dhal (kadale belle)—1 tablespoon
Uddina belle (urad dhal)—1 tablespoon
Jeera (jeerige//cumin seeds)—1 teaspoon
Menthya kaalu (methi dana//fenugreek seeds)—1/2 teaspoon
Coriander leaves (kothambari soppu//hara dhaniya)—1 tablespoon chopped
Oil—1 tablespoon
Salt—to taste
Method
Heat oil in a pan or kadai,once hot enough add kadale and uddina belle,jeera,menthya kaalu,
Sauté on medium flame till dhal turns brown.
Then add ginger,garlic,green chilli,coriander leaves and saute for a second.
Then add in chopped onion and saute for few minutes.
Finally add chopped tomatoes,saute close the lid and cook till tomatoes turn soft.
You can sprinkle little water if needed.
Switch off the stove.keep it aside.
Let it cool completely.
Add salt to the above mixture and grind to smooth paste.
Chutney is ready.
Now prepare for seasoning (oggarane)
Heat one tablespoon of ghee in a laddle,once hot enough,add 1/2 teaspoon of sasive ( mustard seeds),urad dhal (uddina belle),menthya kaalu (methi dana//fenugreek seeds),asafoetida (hing//ingu) each.
When it crackles pour over chutney and mix well.
Serve chutney with rice,chapattis,rotti,dosa ,idli.
