Rave ( sooji //rava) poori

 


Ingredients

Fine sooji ( chiroti rave//semolina)—2 cups
Ghee or oil—1 tablespoon 
Salt—3/4 teaspoon or to taste 
Water—3/4 cup
Oil—for frying 

Method 

Take rave ,salt,ghee in a mixing bowl.
Mix well together with your hands.
Now add ( sprinkle) water little by little and start mixing.( it looks crumble in the beginning)
Do not knead the dough.just make it to mix well together.
Sprinkle little water and cover and keep it aside for 15 minutes.

Rave will absorb water.

After 15 minutes knead the dough lightly to a soft dough.
Cover and let it rest for 5 more minutes.

Pinch a small lemon sized dough and make balls.

Roll the ball into small pooris ( circles) into uniform thickness,dusting with maida or wheat flour.

Meanwhile heat oil in a kadai or pan.
Once  hot enough,drop the rolled poori into the hot oil.
Press until poori puffs up .
Flip over carefully  and fry both the sides.
Remove from oil using a perforated laddle  and transfer them to a colander and drain them on a paper napkin.

Now crisp and tasty poori is ready to serve.
Serve with potato curry,saagu or kurma or any curry of your choice.
