Mylari ( mysuru special) dosa
Ingredients
Uddina belle ( urad dhal)—1/2 cup
Rice flour ( akki hittu )—1 cup
Maida—1/4 cup
Salt— to taste
Sugar— 1 teaspoon
Method
Wash and soak uddina belle in enough water for 5 to 6 hours.
Drain out water and grind to smooth paste in a mixer grinder jar adding little water.
Then add in rice flour,maida and grind everything together to a smooth batter.
Transfer the dosa batter into a big container or vessel.
Cover and keep it to ferment for 7 to 8 hours or overnight.
Next day mix well adding salt and sugar to the fermented batter.
Now heat and grease a iron tava or skillet,once’s hot enough sprinkle little water.
When water stops sizzling, pour a laddle full of batter in the centre and slightly spread it in circular motion.
Do not make it thin,make like pan cakes.
Drizzle little oil or ghee on dosa.
Close with a lid and cook till it turns to brown in colour on medium flame.
Open the lid and remove the dosa.
Serve hot dosa with chutney and saagu .
