Maida besan burfi
Ingredients
Maida (all purpose flour)—1 cup
Besan ( gram flour//Kadale hittu)—1 cup
Ghee—1/2 cup
Powdered sugar—1 cup
Cardamom pods ( ellaki//elaichi)—3 to 4
Method
Powder sugar and cardamom pods in a mixer grinder jar to fine powder.
Keep it ready.
Firstly in a non stick pan or thick bottomed kadai,take besan and maida .
Roast on low medium flame for 5 to 6 minutes.
Then add ghee ,roast on low flame stirring continuously.
Keep roasting,in the beginning flours will absorb all the ghee ,after 10 to 12 minutes,it will start releasing ghee and begins to smell aromatic and slightly changes to light brown colour.
Switch off the stove and keep it aside.let it cool completely.( cooling completely is very important)
Finally add powdered sugar and mix well together.
Transfer the mixture into a greased tray or tray lined with parchment or butter paper.
Tap and top with chopped cashew nuts or pista or badam( almonds).
Press lightly.
Let it rest until it sets completely.
Cut into desired shape.
