Plum cake ( with jaggery,wheat flour)
Ingredients
Wheat flour ( atta//godhi hittu)—1 cup
Jaggery powder (Bella//gud)—1/2 cup
Fresh orange juice—1/2 cup
Refined oil—1/4 cup +1 tablespoon
Milk powder —3 tablespoon ( 1/3 cup)
Boiled and cooled milk—1/2 cup
Lemon juice—1 teaspoon
Baking powder—1 teaspoon
Cooking soda—1/2 teaspoon
Spices
Dalchini (cinnamon sticks)—1 piece
Green cardamom pods(ellaki//elaichi)—3
Cloves (lavanga)—3
Vanilla essence—1 teaspoon or chocolate essence
Fruits and nuts
Tutti frutti—1/2 cup
Black raisins ( drakshi)—1/4 cup
Golden raisins (drakshi)—1/4 cup
Walnuts —1/4 cup
Badam (almonds)—1/4 cup
Cashew nuts (godambi//kaju)—1/4 cup
Melon seeds—1/4 cup
Wheat flour (atta//godhi hittu)—1/4 cup to mix nuts and fruits.
You also need round cake tin,parchment paper or butter paper,trivet stand,cooker or any thick bottomed kadai or vessel with lid.
Method
Chop all the nuts into small pieces ( you can do it in food processor also)
Firstly take orange juice and jaggery powder in a bowl and mix well till jaggery powder is dissolved completely.
Keep it aside.
Next take all the fruits and nuts in a bowl and sieve 1/4 cup of wheat flour and mix well.
Keep it ready.
Then powder dalchini,cloves and cardamom and keep it ready too.
Then take the jaggery orange juice mix,add oil and whisk well.
Add vanilla essence and whisk .
Add spices powder and whisk again.
Now sieve the wheat flour,milk powder,baking powder,cooking soda into the same bowl and fold everything well together.
Then add fruit and nut mixture and milk,lemon juice and fold together well.
Fold the mixture well until everything combines.
Now place the parchment paper in cake tin and brush with oil.
Pour the cake batter into the greased cake tin.
Tap well.
Spread some nuts and fruits on top of the batter.
Preheat the kadai or cooker for 9 to 10 minutes on medium flame.
Place the cake tin inside.
Let it cook for 45 to 50 minutes ( or till done)on medium low flame.
To check insert a tooth pick or knife,it should come out clean without any crumbs stuck.
Remove from kadai immediately and allow it to cool completely.
Then cut into pieces.
