Fresh orange juice cake
Ingredients
Maida ( all purpose flour)—2 cups
Fresh orange juice—1 cup
Sugar powder —1 cup
Milk powder—1/2 cup
Refined oil—1/4 cup
Baking powder—1 teaspoon
Cooking soda—1/2 teaspoon
Tutti frutti—3 tablespoon
Grated orange rind —1 teaspoon
You also need cake tin,parchment paper or butter paper,trivet stand,cooker or any thick bottomed kadai or vessel with lid.
Method
Firstly take orange juice and sugar powder in a mixing bowl and whisk well till sugar powder is dissolved completely.
Then add in oil and whisk well .
Now sieve the maida,milk powder,baking powder and soda into the same bowl and fold everything well together.
Now little maida to tutti frutti and mix well.
Add the orange peel and tutti frutti to the above batter and fold well.
Now place the parchment paper in cake tin and brush with oil.
Pour the cake batter into the greased cake tin.
Tap well.
Spread some cashews and raisins on top of the batter.
Preheat the kadai or cooker for 9 to 10 minutes on medium flame.
Place the cake tin inside the kadai.
Let it cook for 45 to 50 minutes ( or till done) on medium low flame.
To check insert a tooth pick or knife,it should come out clean without any crumbs stuck.
Remove from kadai immediately and allow it to cool completely.
Then cut into pieces.
