Besan milk powder burfi
Ingredients
Besan ( Kadale hittu// chickpea flour )—2 cups
Pure ghee ( tuppa)—1 cup
Milk powder—1 cup
Sugar—1 1/2 cup
Water—1 cup
Cardamom pods ( ellaki//elaichi)—2
Chopped badami (almonds//badam // cashews (godambi)—3 tablespoon
Method
Powder the cardamom and keep it ready.
Firstly in a nonstick pan or thick bottomed kadai,take ghee.
Heat on low flame,add besan and mix stirring continuously .
Keep roasting on low flame,in the beginning besan will absorb all the ghee and mixture will become thick.
Continue to stir nonstop,after 10 to 12 minutes,besan will start releasing ghee and begins to smell aromatic.
At this stage add milk powder and cardamom powder and mix well.
Transfer the mixture to a plate and let it cool completely.( this stage is very important)
Next in the same pan take sugar and water.
Keep it for boiling on medium flame.
Let it boil till sugar syrup turns to one thread (string ) consistency .
At this stage add cooled prepared besan milk powder mixture and stir continuously on low flame.
Stir till it turns to a smooth consistency and well blended ( nearly for 3 to 5 minutes).
Transfer the mixture into a tray lined with parchment or butter paper.
Tap and top with chopped nuts,press lightly.
Let it rest until it sets completely.
Remove from the tray and cut into desired shape.
