Kayi hurittu ( coconut rice snack) travel food

 


Ingredients 

Rice ( chaval//akki)—1 cup
Fresh grated coconut ( kayi turi //nariyal)—1 cup
Jaggery powder ( Bella//gud)—3/4 cup
Cardamom pods ( ellaki//elaichi)—5 

Method 

Firstly wash rice in water for 3 to 4 times.
Leave it in water for 2 to 3 minutes.( do not over soak)
Drain water completely in a stainer.
Spread the rice evenly on a clean thick cloth .( in shade)
Leave it for 8 to 10 minutes.

Transfer the dried rice to a mixer grinder jar along with cardamom pods.
Grind to a fine powder.

Transfer the rice powder to a thick bottomed kadai or nonstick pan.
Add grated fresh coconut and mix well together.

Roast on low medium flame stirring continuously.
Roast until it turns to light brown in colour.

( if you are making in large quantity,roast in batches)

Let the mixture cool completely .
Finally add jaggery powder and mix well with hands.

Store in an airtight container and use as required.
You can eat as snacks.
