Instant otthu shavige ( rice noodles)
Ingredients
Rice flour ( akki hittu//chaval atta)—1 cup
Water—1 1/2 cup
Salt—1 teaspoon
Ghee—1 teaspoon
Method
Heat water with ghee and salt in a thick bottomed kadai or nonstick pan on medium flame.
When the water starts boiling,switch off the flame,add rice flour stirring continuously.
Mix well till rice flour is mixed well and a soft dough is formed.
Cover with a lid and let it stay in that hot pan for 5 minutes ( no cooking)
Now transfer the dough onto a plate and knead to a soft smooth dough with wet hands.
Make a cylindrical shaped dumplings out of dough and place them in a greased plate in a steamer.
Steam them for 20 minutes on medium flame.
Now grease the chakli maker with some oil and place the dumplings inside the maker.
Tighten with the lid and press shavige in circular motion on greased plate.
Keep covered the rest of the dough else they become hard.
Press all the dumplings in the same manner.
Now otthu shavige is ready.
Now preparing for lemon shavige
Oil—2 tablespoon
Mustard seeds (sasive//rai)—1 teaspoon
Jeera (jeerige//cumin seeds)—1 teaspoon
Channa dhal (kadale belle)—1 tablespoon
Urad dhal (uddina belle)—1 tablespoon
Asafoetida (hing//ingu)—1/2 teaspoon
Peanuts (ground nuts//kadale kayi bija)—-2 tablespoon
Turmeric powder (arisina//haldi)—1/2 teaspoon
Curry leaves (karibevu//kadipatta)—few
Coriander leaves (kothambari soppu//hara dhaniya)—2 tablespoon chopped
Fresh grated coconut (kayi turi//nariyal)—2 tablespoon
Green or dry red chillies—4 to 5
Salt—to taste
Lemon —1
Prepare for seasoning (oggarane)
Heat oil in a pan or kadai,once hot add peanuts and sauté on medium flame till crisp.
Then add sasive,jeerige,hing,when it crackles add kadale belle and uddina belle, arisina.
Then add chopped green chillies,karibevu and saute.
Next add salt,and coconut,mix well together.
Switch off the stove.
Add this mixture to cooled shavige, add chopped coriander leaves,squeezed lemon juice.
Mix everything well together gently.
Delicious otthu shavige is ready to serve.
