Godhi hittina otthu shavige ( wheat flour noodles)
Ingredients
Godhi hittu ( wheat flour//atta)—1 glass ( cup)
Water—1 glass
Ghee (tuppa)—1 teaspoon
Salt—1 teaspoon
Method
Heat water with ghee and salt in a thick bottomed kadai or nonstick pan on medium flame.
When the water starts boiling,switch off the stove,add wheat flour stirring continuously.
Mix well till the wheat flour is mixed well and a soft dough is formed.
Cover with a lid and let it stay in that hot pan for 5 minutes ( no cooking)
Now transfer the dough onto a plate and knead to a soft smooth dough with wet hands.
Make a cylindrical shaped dumplings out of dough and place them in a greased plate in a steamer.
Steam them for 20 minutes on medium flame.
Now grease the chakli maker with some oil and place the dumplings inside the maker.
Tighten with the lid and press shavige in circular motion on greased plate.
Keep covered the rest of the dumplings else they become hard.
Press all the dumplings in the same manner.
Now godhi hittina otthu shavige is ready.
Let it cool completely.
Preparing for masala
Beans ( huruli kayi)—10 to 12
Capsicum ( dappa menasina kayi)—2
Carrot—2
Tomato—1 medium sized
Onion (irulli//pyaz)—1 medium sized or 2 small
You can take vegetables of your choice.
Oil—3 tablespoon
Sasive (mustard seeds//rai)—1/2 teaspoon
Jeera (jeerige//cumin seeds)—1 teaspoon
Curry leaves (karibevu//kadipatta)—few
Salt—to taste
Sugar—1 teaspoon
Red chilli powder —1/2 teaspoon
Garam masala powder—1/2 teaspoon
Jeera powder—1/2 teaspoon
Or you can also use curry powder or maggie masala powder
Method
Chop all the vegetables into small cubes.
Heat oil in a pan,once’s hot add sasive and jeerige.
When it crackles add chopped onion and karibevu.
Sauté on medium flame for a minute.
Then add all the other vegetables and sprinkle little water and cook on medium flame.
When the vegetables turns soft and cooked ( don’t over cook,let it be little crunchy).
Add in all the masala powders,salt,sugar,
Mix well .
Cook for a while.
Switch off the stove.
Add the cooled shavige.
Mix everything well together gently.
Now tasty otthu shavige is ready to serve.
