Rave( sooji) ukkarisida rotti
Ingredients
Bombay rava ( uppittu rave//semolina//sooji)—1 cup
Water—2 cups
Ghee or oil—1 teaspoon
Salt—1/4 teaspoon
Rice flour ( akki hittu)—for dusting
Method
Firstly boil water in a thick bottomed kadai or pan on medium flame adding salt and ghee.
Once it’s starts boiling,reduce the flame to low and add rava slowly stirring continuously.
When it starts thickening,cover with a lid and cook for 4 to 5 minutes on low flame.
Then transfer to a plate.
Grease your hands or wet your palms knead the dough until you get a soft dough.
Let it cool completely.
Again knead the dough.
Divide into big lemon sized balls.
Again knead the balls in between your palms to make a soft ball.
Dust with rice flour and gently roll the balls into circles with the rolling pin.
Now heat the tava or nonstick pan on medium flame.
Once hot transfer the rolled rotti on tava.
Once you see bubbles on top,flip it gently on the other side.
You may see brown spots.
Roti puffs up and remove it from tava.
You can also cook the rotti directly over the flame like phulka.
You can apply little ghee on rotti if you wish
Serve soft rotti with chutney,gojju or any curry of your choice.
