Ragi mudde ( ragi balls)
Ingredients
Ragi flour ( finger millet)—1cup
Water—2 cups
Note;;measurement is 1 :2
Salt—1 teaspoon
Ghee or oil—1 teaspoon
Method
Firstly add one teaspoon of ragi flour in 1/4 cup of water and mix well and keep the slurry ready.
Then add ragi flour and salt in 3/4 cup of water and whisk well and keep it ready.
Then take a thick bottomed kadai or pan or non stick pan.
Add one cup of water,ghee and keep it for boiling on medium flame.
Add the slurry too.
Once the water comes to boil,add the ragi mixture slowly stirring continuously,turn the flame to low and cook until it thickens.
Mix continuously using a wooden laddle.
Keep stirring till mudde becomes smooth and thickens completely
Cover with a lid and cook for 3 to 4 minutes on low flame,until you see the mixture got a shine on it.
To shape the ragi mudde to balls,grease a bowl with ghee,place laddle full of ragi mudde mixture and start twirling it ( rotating rapidly)around until it becomes a nice smooth ball.
Once done,serve hot with sambar of your choice.
