Ragi flour spongy dosa ( pan cake)
Ingredients
Ragi hittu (ragi flour//finger millet flour)—1 cup
Avalakki (poha//beaten rice)—1/4 cup
Fresh grated coconut (kayi turi//nariyal)—1/4 cup
Curd thick (mosaru //dahi)—1/4 cup
Sugar—1 teaspoon
Salt—to taste.
Cooking soda—1/2 teaspoon
Water—1 to 11/2 cups (as required)
Method
Firstly coarsely powder avalakki in a mixer grinder jar.
Then add in grated coconut and grind again.
Finally add ragi hittu,salt,sugar,curd and water.
Grind to a smooth batter.
Transfer it to a bowl.
Cover with a lid and let it rest for 10 to 15 minutes.
Mix well again.
Then add the soda and mix everything well together.
Now heat the pan or non stick pan,once’s hot enough pour a laddle full of batter in the centre and slightly spread it in circular motion.
Do not make it thin,make like pan cakes.
Drizzle little oil.
Close with a lid and cook till it turns to brown in colour.
Open the lid and remove the dosa.
After removing dosa turns little black.
Serve hot dosa with chutney or saagu or any curry.
