Gobi ( cauliflower) paratha

 



Ingredients for dough 

Wheat flour (atta//godi hittu)—2 cups
Oil or ghee—2 teaspoon 
Salt—to taste 
Water —as required to knead dough 

Method 

Take wheat flour,salt,oil in a large mixing bowl.
Mix well .
Start adding water little by little and knead to a smooth dough.
( you can also knead using food processor).
Cover and let it rest for 15 to 20 minutes.

Ingredients for stuffing 

Cauliflower (gobi)—1 small ( grated cauliflower—2 cups)
Jeera (jeerige//cumin seeds)—1 teaspoon 
Om kaalu ( ajwain//caraway seeds)—1 teaspoon 
Hing (asafoetida//ingu)—1 teaspoon 
Turmeric powder (arisina//haldi)—1 teaspoon 
Coriander  seeds powder (dhania powder)—1 tablespoon 
Red chilli powder (achha menasina pudi)—1 teaspoon 
Dry ginger powder ( or fresh ginger grated)—1 teaspoon 
Garam masala powder—1 teaspoon 
Salt—to taste 
Chopped coriander leaves (kothambari soppu)—3 tablespoon 

Method for preparing stuffing 

Wash the cauliflower thoroughly by soaking in salt water .
Drain water completely.
Grate cauliflower using a grater or use a food processor.
Transfer the grated cauliflower to a  clean muslin cloth or a clean hand kerchief.
Squeeze the water ( juice) completely.
 
Transfer to a mixing bowl.
To this add,jeera,ajwain,dhania powder,arisina,red chilli powder,ginger powder,hing,salt,garam masala powder ,chopped coriander leaves.
Combine all the ingredients together.
Now stuffing is ready.

Method for preparing paratha 

Divide the dough into equal parts.(balls)
Take one of the ball and roll or make into small circle.
Put one tablespoon of the stuffing in the centre.
Do not over fill stuffing,as it will be difficult to roll paratha.
Bring the edges together and seal the edges.
Flatten the ball using your hands.

Now roll the dough into a circle by using a rolling pin.
Dust with flour while rolling.

Now heat the tava or skillet on medium flame.
Transfer the rolled paratha onto hot tava.
Cook the side by applying oil and then flip over.
Apply oil on the other side also.
Cook the paratha until both sides have golden spots on them.
Remove it to plate.
Now gobi paratha is ready to serve.
Serve hot paratha with pickle,curd,butter,onion,chillies,chutney or curry.
