Dal tadka ( hotel style)

 


Ingredients 

Togari belle ( toor dhal//arhar dal//pigeon peas)—1/2 cup
Moong dhal ( hesaru belle)—1/2 cup
Masoor dhal (red dhal)—1/2 cup


Green chillies (hasiru menasina kayi//hari mirch)—1
Turmeric powder (arisina//haldi)—1/2 teaspoon 
Oil or ghee—1 teaspoon 

Onion (irulli//pyaz)—finely chopped—2 medium sized 
Tomato—3 medium sized—finely chopped 
Ginger paste—1 teaspoon 
( you can also add 1 teaspoon garlic paste—optional)

Red chilli powder —1 teaspoon 
Roasted jeera powder—1 teaspoon 
Dhania powder ( coriander powder)—2 teaspoon 
Garam masala powder—1/2 teaspoon 

Oil—3 tablespoon 
Jeera (jeerige//cumin  seeds)—1 tablespoon 
Bay leaf ( pulao leaf)—1 

Curry leaves (karibevu//kadipatta)—few
Kasoori methi leaves( dried fenugreek leaves)—1 tablespoon 
Salt—to taste 
Sugar—1 teaspoon 
Chopped coriander seeds (dhania leaves//kothambari soppu)—chopped—2 tablespoon 

Method 

Wash toor dhal,moong dhal,masoor dhal .
Take the washed dhals in a pressure cooker,add turmeric powder,ghee green chilli and enough water.
Pressure cook for 4 whistles on medium flame.

Heat oil in a kadai or pan,add jeera,bay leaf and saute.
Then add in curry leaves,chopped onion,ginger paste and fry until it turns translucent.
Then add chopped tomatoes and cook till tomatoes turn soft on medium flame.
When tomatoes turns soft ,add in salt,sugar and all masala powders( spice powders).
Add  1/2 cup of water and cook until oil starts leaving sides from gravy.
Once’s done add in cooked dhals and mix well.

Add kasuri methi leaves and little water and let it boil.
Make sure the dhal is not watery.it should be  thick in consistency.
Once’s boiled well switch off for stove.

Now prepare for seasoning (oggarane)

Ghee—2 tablespoon 
Jeera (jeerige//cumin seeds)—1 teaspoon 
Dry red chillies—2 broken
Hing (asafoetida//ingu)—1 teaspoon 
Red chilli powder ( achha menasina pudi)—1/4 teaspoon 

Heat ghee in a laddle,once hot add jeera,hing,dry red chillies and saute .then add red chilli powder and switch off the stove.
Pour over boiled dhal.
Garnish with chopped coriander leaves.

Serve tasty dal tadka with hot rice,jeera rice,chapattis,dosa,rotti.
