Pani puri premix recipe ( golgappa instant premix powder)

 

Ingredients for spicy pudina (khara) chutney  pre mix

Dried mint leaves ( pudina)—2 cups or 1 big bunch
Dried coriander leaves ( kothambari soppu)—2 cups or 1 big bunch
Dried green chillies (hasiru menasina kayi//hari mirchi)—3 to 4
Jaggery powder ( Bella//gud)—5 tablespoon 
Chat masala powder—1 tablespoon 
Roasted Jeera (jeerige//cumin powder )—powder—1 tablespoon 
Dry mango powder ( amchur powder)—2 tablespoon 
Citric acid ( nimbuppu)—1 teaspoon 
Black salt( kala namak)—1 tablespoon 
Dry ginger powder ( shunti pudi)—1/2 teaspoon 
Hing (asafoetida//ingu)—1/2 teaspoon 
Salt—to taste

Method 

Mix all the above ingredients listed for spicy pudina chutney and blend in a mixer grinder jar to a fine powder.
Instant pani puri pudina premix is ready
Store in an airtight container.

Note;; to dry pudina and coriander leaves,wash them and dry them in shade for  2 to 3 days.

The leaves could also be microwaved on high power for 2 to 3 minutes stirring in between.
Dry green chillies also or microwave it .









Ingredients for making sweet chutney premix powder 

Jaggery powder ( Bella//gud)—1 cup
Corn flour—3 tablespoon 
Red chilli powder—1 teaspoon 
Amchur powder ( dry mango powder)-3 tablespoon 
Roasted jeera powder ( jeerige//cumin seeds)—1 tablespoon 
Kaala namak ( black salt)—1/2 teaspoon 
Salt—1/4 teaspoon 

Method 

Mix all the above ingredients together well or you just blend in mixy 
Instant sweet chutney premix powder is ready.
Store in an airtight container.






Now to prepare pani out of premix

Take  2 teaspoon of spicy pudina chutney powder and stir in 3 cups of cold water or add powder to your spice level.

To make sweet pani

Boil 2 teaspoon of  sweet chutney premix powder in one cup of water and boil it.

Let it cool completely.
This also you can adjust according to your choice.






Serve it with stuffing of mashed potatoes or sprouts or soaked boondi.
