Godhi hittina uttapam ( wheat flour uttapam)
Ingredients
Wheat flour ( atta//godhi hittu)—1 cup
Jeera (jeerige//cumin seeds)—1 teaspoon
Om kaalu ( ona//ajwain//carom seeds)—1 teaspoon
Salt—to taste
Water -- as required
Method
Take all the above ingredients in a mixing bowl,mix well together.
Add water accordingly to make a thick batter.
Set it aside.
Other ingredients
Tomato chopped finely—1 medium sized
Onion ( irulli//pyaz)-finely chopped—1 medium sized
Ginger (shunti//adarak)-paste or finely grated—1 teaspoon
Green chillies (hasiru menasina kayi)—1 finely chopped
Curry leaves (karibevu//kadipatta)—few
Coriander leaves (kothambari soppu//hara dhaniya)—finely grated—2 tablespoon
Ingredients for seasoning (oggarane)
Oil—1 tablespoon
Sasive (mustard seeds//rai)—1 teaspoon
Jeera (jeerige// cumin seeds)—1 teaspoon
Kadale belle (channa dhal)—1 tablespoon
Uddina belle (urad dhal)—1 tablespoon
Hing (asafoetida//ingu)—1/2 teaspoon
Method
Heat oil in a pan or kadai,once hot enough add in sasive,jeerige.
When it crackles add channa dhal,urad dhal,ingu and saute till dhals turns brown.
Next add in chopped onion,green chilli, karibevu,ginger and sauté for a minute on medium flame.
Add in chopped tomatoes and sauté for one more minute.
Switch off the stove.
Add chopped coriander leaves and mix well.
Let the mixture cool completely.
Add this mixture to wheat flour batter and mix well together.
Now heat a nonstick pan or tava or skillet and grease it with oil.
Pour a laddle full of batter and spread evenly in circular motion.
Smear little oil on dosa .
Cover the tava with a lid and cook on medium flame.
Flip and cook on the other side for a minute.
Take it out on a plate.
Tasty wheat flour uttapam is ready to serve.
Serve hot with chutney or tomato sauce.
