Boiled kadale kayi bija salad( peanuts salad)

 

Ingredients 

Kadale kayi bija (peanuts//ground nuts)—1 cup
Onion (irulli//pyaz) finely chopped—1/2 cup or from one  medium sized onion 
Tomato finely grated—one medium sized 
Cucumber (sowthekayi//kheera)—finely chopped—1 cup
Carrot grated—one medium sized 
Aloo (alugedde//potato)—boiled —one  medium sized 
Grated fresh coconut (kayi turi//nariyal)—1/4 cup (optional)
Green chillies (hasiru menasina kayi//hari mirch)—1 finely chopped 
Lemon juice-(nimbe rasa)—1 tablespoon 
Coriander leaves (kothambari soppu//hara  dhaniya)—finely chopped—2 tablespoon 

Salt—to taste 
Hing (asafoetida//ingu)—1/2 teaspoon 
Red chilli powder ( lal mirch powder)—1 teaspoon 
Roasted jeera powder—1 teaspoon 
Chat masala powder—1 teaspoon 

Note;;you can also add capsicum ( bell pepper),raw mango grated,pomegranate (dalimbe bija) .

There is no specific measurement for this recipe.you can adjust according to your choice.

Method 

Wash the peanuts and add enough water and  pressure cook for 4 to 5 whistles on medium flame.
Peanuts should be boiled well and should be tender not mushy.

Once’s the pressure reduces open the lid and drain water completely from peanuts.


Take a big mixing bowl take the peanuts and all other ingredients.
Mix well with your hands until all the ingredients are mixed well.

Enjoy healthy peanuts salad.
This salad can be refrigerated for a day or two.
