Baby corn manchurian with homemade sauce ( baby corn fritters)
Ingredients for making sauce
Tomatoes—4 big sized
Sugar—1/2 cup
Green chillies ( hasiru menasina kayi)—2 to 3
Red chilli powder—1 tablespoon
Salt—1 teaspoon
Lemon—1 small or 3 tablespoon juice
Garlic pods (belluli//lehsun)—5 to 6
Ginger fresh (shunti//adarak)—small piece or ginger paste one tablespoon
Oil—5 tablespoon
Method
Wash the tomatoes and chop them into cubes.
Take all the ingredients except oil in a mixer grinder jar and grind to smooth fine paste without adding water.
Now take oil in a pan or kadai,add the ground paste and keep it for boiling on medium flame.
Keep stirring continuously.
After a while it starts boiling and thickens.
It may take 8 to 9 minutes.
Switch off the stove.
Let it cool completely.
You can store this sauce in an airtight container and refrigerate for 15 days.
This sauce can be used for manchurian,spread for pizza,bread ,noodles etc.

Baby corn—12
Red chilli powder—1 teaspoon
Ginger garlic paste—1 tablespoon
Garam masala powder—1 teaspoon
Black pepper powder ( kaalu menasu pudi)—1/2 teaspoon
Salt— to taste
Water
Corn flour —3 tablespoon
Maida flour—6 tablespoon
Oil— for deep fry
Onion—1 medium sized
Capsicum—1
Corn flour—1 tablespoon
Water—1 cup
Coriander powder (dhania powder)—1 tablespoon
Red chilli powder—1 teaspoon
Garam masala powder—1/4 teaspoon
Salt—to taste
Kasuri methi leaves—2 tablespoon
Coriander leaves—2 tablespoon chopped
Method
Firstly wash baby corn and chop them into small pieces.
Then take those pieces in a big mixing bowl,add in ginger garlic paste,red chilli powder,garam masala powder,salt,black pepper powder.
Mix well with hands.
Then add 3 tablespoon of corn flour and 6 tablespoon of maida.
Mix well.
Then sprinkle little water and make like a thick batter so that corn should be coated well.
Heat oil in a pan or kadai on high heat.
Fry the baby corn in hot oil on high heat until golden and crisp.
Drain them aside on a kitchen tissue or paper.
Now chop onion and capsicum into big pieces.
Mix one tablespoon of corn flour in one cup of water and keep it ready.
Now heat 2 tablespoon of oil in a pan,add onion and sauté for a minute.
Then add chopped capsicum and sauté for one more minute.
Now add 2 tablespoon of prepared sauce,mix well.
Pour in corn flour water and stir well .
Add in coriander powder,salt,red chilli powder,garam masala powder and mix and. Cook for a minute.
Add kasuri methi leaves and stir well.
Finally add coriander leaves.
Serve tasty baby corn manchurian hot as a starter or with fried rice.
