Ragi unde( ladoo//laddu)
Ingredients
Ragi flour( finger millet)—1 cup
Fine sooji ( chiroti rave//semolina)—1 cup
Jaggery powder (Bella//gud)—1 1/4 cup
Cloves (lavanga)—4 to 5
Cardamom pods (ellaki//elaichi)—3
Ghee—4 to 5 tablespoon
Badam( almonds//badami)— chopped —2 tablespoon
Cashew nuts (godambi)—chopped—2 tablespoon
Raisins (drakshi//kishmish)—2 tablespoon
Dry coconut grated (copra//kobbari)—2 tablespoon
Milk—4 to 5 tablespoon
Method
Powder cardamom and cloves together and keep it aside.
Heat one tablespoon of ghee in a pan or kadai and add all chopped dry fruits and raisins.
Fry them on medium flame till they turns to light brown.
Transfer them onto a plate and keep it aside.
Now add one more tablespoon of ghee to the same pan,add ragi flour and sooji to it.
Roast them on low medium heat until nice aroma comes.
Keep stirring continuously.
Do not burn the flour
Add in grated dry coconut and fry for two more minutes .
Switch off the stove.
Add in jaggery powder and powdered elaichi and clove powder.
Mix everything well together.
Transfer to a plate and let it cool to room temperature.
Then add in fried dry fruits.
Mix well together so that it is evenly mixed with your hands.
Then add milk little by little and mix well
You can add one tablespoon of ghee at this stage.
Now take a portion of the mixture and shape into round balls (laddoos) with greased hands.
Make laddus with all the mixture.
Now delicious healthy ragi unde is ready.
