Traditional kalthambittu unde (kallunde)
Ingredients
Hesaru belle ( moong dhal// split green gram)—1 cup
Kadale belle (channa dhal)—1/2 cup
Raw rice—1/2 cup
Hurigadale (roasted gram//fried gram)—1/2 cup
Method
Dry roast hesaru belle,kadale belle separetly until it turns to brown on medium flame.
Roast rice till it puffs up.
Let the ingredients cool completely.
Mix all the above ingredients and powder to fine powder in a mixer grinder jar.
Ingredients for making unde( laddu)
Ground powder—1 cup
Jaggery powder (Bella//gud)—3/4 cup
Grated dry coconut (kobbari//copra)—1/2 cup
Hurigadale (roasted gram//fried gram)—1/2 cup
Roasted (halved) peanuts//kadale kayi bija//ground nuts—1/2 cup
Cardamom pods (ellaki//elaichi)—4
Water—1/3 cup
Method
Powder cardamom.
Mix powder,hurigadale,grated dry coconut,peanuts,cardamom powder and mix well together in a mixing bowl and keep it aside ready.
Now melt the jaggery in a pan adding water on medium flame.
When the jaggery is dissolved completely,let it boil.
Keep stirring continuously.
Boil the jaggery syrup until you get the one thread consistency ( paaka).
Turn off the heat.
Add this syrup to the dry powder mixture little by little and keep mixing with a spoon.
Mix it well together.
Now take the desired amount of mixture and shape into round balls.
Roll the balls in the powdered mixture.
Let it cool completely.
