Tomato puliogare
Ingredients
Rice ( sona masoori)—1 cup
Tomato (medium sized)—8 to 9
Rasam powder ( saarina pudi ) —3 tablespoon
Jaggery powder (Bella//gud)—3 tablespoon
Oil—4 to 5 tablespoon
Salt—to taste
Jeera (jeerige//cumin seeds)—1 tablespoon
Menthya kaalu (methi dana//fenugreek seeds)—1 tablespoon
White or black yellu (til//sesame seeds)—2 tablespoon
Black pepper corns (menasu kaalu//kali mirch)—1 teaspoon
Dry roast the above four spices on medium flame and grind coarsely
Method
Cook the rice adding 2 1/4 cups of water and pressure cook for 3 whistles.
Keep it ready.
Let it cool completely.
Wash the tomatoes and chop them finely.
Now take a pan or kadai,add oil and keep it for heat on medium flame.
Once’s hot enough add chopped tomatoes and fry them .
Cook them till they become soft and mushy,keep stirring in between.
Now add rasam powder and jaggery powder.
Let it cook till it becomes a thick paste and starts leaving oil.
Now add salt and cook for few more minutes.
Switch off the stove.
Now prepare for seasoning (oggarane)
Ingredients
Oil—2 tablespoon
Sasive (mustard seeds//rai)—1 teaspoon
Jeerige (jeera//cumin seeds)—1 teaspoon
Channa dhal (kadale belle)—1 tablespoon
Urad dhal (uddina belle)—1 tablespoon
Hing (asafoetida//ingu)—1 teaspoon
Curry leaves (karibevu//kadipatta)—few
Kadale kayi bija (peanuts//ground nuts)—1/2 cup
Dry red chillies (ona menasina kayi)—2 to 3
Dry coconut grated (kobbari//copra)—1/4 cup
Turmeric powder (arisina//haldi)—1/2 teaspoon
Method
Heat oil in a pan ,once’s hot enough,start adding oggarane ingredients.
Firstly add sasive,jeerige,when it crackles add kadale kayi bija and sauté for a while till it turns brown.
Now add in kadale and uddina belle,hing,turmeric powder,dry red chillies,curry leaves and saute .
Add in grated coconut and mix well.
Switch off the stove.
Add this seasoning (oggarane) to tomato paste,and also add four spices masala powder.
Mix everything well together.
Now add the cooked rice and mix it gently.
Tasty tomato puliogare is ready to serve.
Serve with mosaru bajji ( raita) of your choice.
