Genasina sihi palya ( sweet potato stir fry)

 


Ingredients 

Sihi genasu ( sweet potato//shakarakand)—3 
Green chillies (hasiru menasina kayi//hari mirch)—3
Fresh grated coconut (kayi turi//nariyal)—1/4 cup
Jaggery ( Bella//gud)—small piece or 2 tablespoon powder 
Curry leaves (karibevu//kadipatta)—few
Coriander leaves (kothambari soppu)—1 tablespoon chopped 
Salt—to taste
Water—1 cup

Seasoning (oggarane) ingredients 

Oil—2 tablespoon 
Sasive (mustard seeds//rai)—1 teaspoon 
Jeera (jeerige//cumin seeds)—1 teaspoon 
Asafoetida (hing//ingu)—1/2 teaspoon 
Kadale belle (channa  dhal)—1 teaspoon 
Urad dhal (uddina belle)—1 tablespoon 

Method 

Wash the sweet potato’s and chop into medium sized cubes.
No need to peel the skin of sweet potatoes.

Keep the pan or kadai on stove,heat oil on medium flame.
Add sasive,jeerige,hing when it crackles add kadale belle and uddina belle.
When the dhals turns brown add chopped green chillies and sauté for a second.
Add karibevu and chopped genasina pieces and sauté.
Now add salt,jaggery and water and let it cook on medium flame.
Keep stirring in between.
When genasu turns soft add grated coconut and chopped coriander leaves and mix well.
Switch off the stove.

Genasina Sihi palya is ready to serve.
