Carrot soup

 


Ingredients 

Carrot—5 medium sized 
Onion (irulli//pyaz)—1 medium sized 
Garlic pods (belluli//lehsun)—2 
Ginger—(shunti//adarak)—2 inches piece
Butter (white or yellow)—2 tablespoon 
Black or white pepper powder —1 tablespoon 
Salt—to taste 
Water—2 0r 3 cups

HeatMethod 

Wash the carrots and peel the skin.
Chop carrots,onion into cubes.
Chop ginger and garlic too.

Now in a pressure cooker  melt butter add onion,garlic,ginger and saute for few  minutes till onion turns soft.
Add in chopped carrots and saute for 2 minutes.
Now add 1 1/2 cup water .
Cover the lid and cook for 3 to 4 whistles on medium flame.
Once’s the pressure reduces open the lid and blend to a smooth purée using a  hand blender or mixer grinder jar.
( if you are using mixer grinder jar  cool the mixture completely and then blend)
Mix well and add little more water to adjust the consistency of soup.
Add salt,pepper powder and keep it back on stove.
Boil for few minutes.

Serve hot soup with a drizzle of fresh cream (optional )and pepper powder (optional).
