Sihi kumbalakayi (yellow pumpkin) cutlets
Ingredients
Pumpkin(Sihi kumbalakayi) grated—2 cups
Onion (irulli//pyaz)—1 medium sized
Capsicum (dapta menasina kayi)—1 medium sized
Rice flour (akki hittu)—1/2 cup
Green chillies (hasiru menasina kayi)—2 small chopped
Ginger (shunti//adarak)—small piece grated
Fresh coriander leaves (kothambari soppu) chopped—2 tablespoon
Dry masala powders
Red chilli powder (achha menasina pudi)—1 teaspoon
Jeera powder —1 teaspoon
Garam masala powder—1 teaspoon
Chat masala powder—1 teaspoon
Hing (asafoetida)—1 teaspoon
Om kaalu (ajwain//carom seeds)—1 teaspoon
Salt to taste
Bread crumbs—for coating or powdered corn flakes
Oil—for shallow fry
Method
Wash and peel the skin and discard the seeds.
Grate the pumpkin.
Squeeze out the water from pumkin.
Finely Chop the onion and capsicum .
Now transfer the grated squeezed pumpkin into a mixing bowl,add all the other ingredients and dry masala powders and mix well together with your hands to a smooth dough.
Do not add any water.
Divide the dough into equal parts,then make tikki ( cutlet)shapes from them in any desired shape.
Next roll them in bread crumbs and keep it ready.
Heat minimum oil in a pan ,once hot place the cutlets and fry them till they are golden brown and crispy on both sides on medium flame.
Once done remove from pan and transfer onto a kitchen tissue or paper towel.
Serve hot with tomato sauce or ketchup.
