Sihi kumbalakayi shorba ( sweet pumpkin Indian soup)
Ingredients
Sihi kumbalakayi (sweet pumpkin//yellow pumpkin)—chopped—3 to 4 cups
0nion( irulli//pyaz)—1 medium sized
Garlic pods (belluli)—3
Ginger (shunti)—small 1/2 inch piece
Salt —to taste
Sugar—1 teaspoon
Ghee or butter —2 tablespoon
Water—2 cups
Dry red chillies (ona menasina kayi)—2 small
Coriander seeds (dhania seeds//kothambari bija)—1 tablespoon
Dalchini stick (cinnamon stick)—small piece (1 inch )
Cloves (lavanga)—2
Black cardamom—1
Star anise—1/2 or 1 small
Black pepper corns (menasu kaalu)—5 to 6
Method
Wash and peel the skin of pumpkin and chop into cubes
Chop onion into cubes.
Now take a pressure cooker add butter once hot enough add Coriander seeds,cardamom,dalchini,pepper corns,cloves,ginger,dry chilli and saute for few seconds on medium flame.
Then add in garlic and onions and sauté till onions turns translucent.
Now add chopped pumpkin and stir for 2 to 3 minutes.
Add in 2 cups of water and mix well.
Close the cooker lid and cook for 3 whistles.
Once the pressure reduces open the cooker lid and let the mixture cool completely.
Then transfer the cooled mixture into a mixer grinder jar and blend to smooth paste (puree).
Now transfer the blended mixture to a pan or same cooker,add salt and sugar and bring it to boil.
( add more water if its too thick).
Serve hot garnished with fresh coriander leaves and fresh cream.
You can also add bread croutons.
