Shunti mitai ( ginger candy)
Ingredients
Fresh Ginger paste( shunti//adarak)—1 cup
Jaggery powder (Bella//gud)—2 cups
White kallu sakkare (candy sugar or rock sugar or diamond sugar) — 1/4 cup
Spices for making powder
Coriander seeds (dhania seeds//kothambari bija)—1 tablespoon
Jeera (jeerige//cumin seeds)—1 teaspoon
Om kaalu (ajwain//carom seeds)—1/2 teaspoon
Cloves (lavanga)—2
Black pepper corns (kaalu menasu)—1/2 teaspoon
Cardamom pods (ellaki//elaichi)—2
Dry roast all the spices on medium flame (just warm them).do not burn it.
Let it cool and grind to fine powder in a mixer grinder jar.
Keep it ready.
Also powder kaalu sakkare( sugar ) and keep it ready too.
Method
Firstly wash the ginger roots ,peel the skin and chop them to small pieces.
Transfer the chopped pieces into mixture grinder jar and grind it to smooth paste ( add 1 or 2 tablespoon of water if required while grinding).
Now melt jaggery powder in a pan adding one tablespoon of water,cook till until jaggery melts. Then add in ginger paste and spice powder and stir well on medium flame,
Keep stirring the mixture continuously till it gets thickened. It starts separating from pan.
Make sure there is no water content left in mixture
Transfer to a bowl or plate. Let it cool slightly.
Now grease your palms with ghee or oil. Take small portion and shape into small sized balls.
Coat the balls with powdered rock sugar while it’s warm otherwise it won’t get coated properly. Let it cool completely. Store them in an airtight container or glass jar.
