Instant set dosa ( sponge dosa)
Ingredients
Medium rave( semolina//suji//rava)—1 cup
Avalakki ( poha// beaten rice)—3/4 cup
Thick curd (mosaru//dahi)—1/2 cup
Water—1 cup + 1/2 cup
Salt—1/2 teaspoon
Sugar—2 teaspoon
Eno fruit salt—1/2 teaspoon or cooking soda
Milk—2 teaspoon
Oil—for making dosa
Tava or skillet or nonstick pan or tava
Method
Wash ( rinse) avalakki in a bowl ,drain water completely.
Add in rava,curd ,salt,sugar and one cup of water.
Mix well.
Let it rest for 10 to 15 minutes.
Then transfer the soaked mixture into a mixer grinder jar and grind to smooth batter.
Transfer to a bowl.
Add in 1/2 cup of water and prepare dosa batter ( regular dosa batter consistency)
Add in eno fruit salt,and 2 teaspoon of milk over it to activate eno fruit salt.(turns frothy)
Give a quick mix.
Now heat the tava,once hot enough pour a laddle full of batter and slightly spread it in circular motion.
Drizzle little oil.
Close the lid and cook for 10 seconds.
Open the lid and flip the dosa and cook the other side.(optional)
Remove and serve hot with chutney or saagu or tomato onion gojju
