Avare kaalu kadubu (idli// dumplings)
Ingredients
Avare kaalu (hyacinth beans)—1 cup heaped ( boiled )
Raw rice rava ( akki tari )—2 cups
Green chillies (hasiru menasina kayi)—4 to 5
Ginger (shunti//adarak)—5 inches piece
Curry leaves (karibevu//kadipatta)—handfull
Coriander leaves (kothambari soppu)—handfull
fresh grated coconut (kayi turi//nariyal)—1/2 cup
Jeerige (jeera//cumin seeds)—2 tablespoon
Black pepper corns (kaalu menasu)—1 teaspoon
Salt —to taste
Jaggery powder ( Bella//gud)—1 tablespoon
Water—5 cups
Ratio of water is 1cup rava : 2 1/2 cup water
For seasoning (oggarane)
Oil—3 tablespoon
Sasive (mustard seeds //rai)—1 teaspoon
Channa dhal (kadale belle)—1 tablespoon
Uddina belle (urad dhal)—1 tablespoon
Hing (asafoetida//ingu)—1 teaspoon
Method
Firstly boil avare kaalu with enough water in a pressure cooker for 3 whistles.
Once’s the pressure reduces open the lid of cooker and strain water.
You can use the same strained water.
Transfer green chillies,karibevu,coriander leaves,ginger into a mixer grinder jar and just pulse to coarse mixture without adding water.
Roughly powder jeerige (jeera) and pepper corns.
Dry roast akki tari (rava )until it’s slightly warm.( you can microwave it for 2 minutes)
Now heat oil in a pan or kadai,on medium flame,once’s hot enough add sasive,when it crackles add both channa and urad dhal.
Sauté till it turns to light brown.
Add in hing,and ground chilli paste and sauté for a second.
Next add boiled avare kaalu,mix well.
Add in salt,jaggery powder and grated coconut,stir well.
Now add water and let it boil..
As the water starts boiling slowly add rava and keep stirring.
Let it cook for a while,until rava absorbs water completely and comes together to a mass.( this looks like Upma //uppittu at this stage)
Switch off the stove.
Let it cool for few minutes.
Now to prepare kadubu
Dip your hand in cold water as mixture will be hot,take a orange sized mixture into your wet hands and shape it like kadubu.( any shape of your choice).
Finish making all kadubus.
Place these kadubus in greased idli plates and steam it like idlis for 15 minutes on medium heat.
Once done remove from the plates.
Delicious avare kaalu kadubus are ready to eat.
Serve with chutney,curd,and ghee .
This is a traditional malnaadu recipe.
