Sweet and khara boondi kaalu recipe

 





Ingredients for making batter 

Kadale hittu ( besan // gram flour)—1cup
Rice flour ( akki hittu)—1 tablespoon 
2 pinches —cooking soda
Oil—2 tablespoon 
Water—3/4 cup to little more ( depends on type of flour or enough to make batter)

Ingredients for Sihi boondi kaalu 

White sugar—1/2 cup 
Cardamom pods ( ellaki//elaichi )—3 to 4 
Cashews (godambi)—2 tablespoon 
Raisins (drakshi)—2 tablespoon 
Cloves(lavanga)—5 to 6
Dry coconut grated (kobbari// copra)—1/4 cup
Ghee—1 tablespoon 

Ingredients for khara boondi kaalu 

Kadale kayi bija ( peanuts//ground nuts)—1/4 cup
Hurigadale (roasted gram//fried gram)—1/4 cup
Cashew nuts (godambi)—10 to 15
Salt—1/2 teaspoon or to taste
Red  chilli powder (achha menasina pudi)—1 teaspoon or to your taste
Curry leaves ( karibevu//kadipatta)—1/4 cup
Dry coconut pieces( chunks) ( copra//kobbari )—1/4 cup

Oil—for deep frying 
Boondi making jhalari( or laddle)

Method for making boondi kaalu 

Sieve besan ,rice flour,cooking soda to a mixing bowl.
Heat  2 tablespoon of oil till it’s really hot ( smoking) and pour it into the besan flour mixture.
Rub together with your hands till it mixes well.
Now add water little by little and start mixing  to make a batter.
The batter should be thick and should be dripping consistency.
( not too thin nor too thick) 

Procedure for frying boondi 

Heat oil in a pan or kadai on medium flame .
Grease the boondi making laddle on both sides.
Keep the laddle almost 2 inches above oil,and pour a laddle full of batter and slowly turn in circular motion as you do for dosa .

Fry the boondis on medium flame till the sound is nullified and slightly changes it’s colour to light brown.
Just press it between your fingers to check for crispiness.
Remove the fried boondi kaalu and transfer onto a kitchen tissue or towel.
Repeat the same procedure for remaining batter and fry all the boondi kaalu and keep it ready.

Now divide the boondi kaalu into 2 equal portions, in separate mixing bowls.

Procedure for making Sihi boondi kaalu 

Powder the sugar along with cardamom pods to fine powder.

Heat the ghee in a laddle or pan,fry cashews and raisins,cloves on medium flame until raisins puffs up and cashews turns brown.
Switch off the stove and add grated dry coconut and mix well.
 Now take one bowl of fried boondi kaalu add. Powdered sugar( nearly 6 to 7 tablespoons or according to taste) fried nuts and coconut and mix well .
Mix it gently .
Now delicious Sihi boondi kaalu is ready.

Procedure for making khara boondi kaalu.

Fry the peanuts,hurigadale,coconut chunks,karibevu,cashew nuts separetly one by one in the remaining oil ( which we used for frying boondi kaalu).

Now add in above  fried ingredients,salt,red  chilli powder to the other half of boondi kaalu and mix well together gently.

Now khara boondi kaalu is ready.
Allow them to cool completely and store in an airtight container.

Note;; i have given measurements for smaller quantity you can increase and adjust ingredients according to your requirements.
