Soft Mysore pak recipe ( melts in mouth)

 

Ingredients 

Kadale hittu ( besan//gram flour)—1 cup
Sugar—2 cups
Pure ghee —2 1/2 cups
Water—1 cup

Tray and parchment paper or butter paper.
Just line the parchment paper on tray and set aside ( no need to grease the paper )

Method 

Melt the ghee in a sauce pan .( just heat until it melts,it doesn’t have to be heated much).
Now take kadale hittu ( besan) in a bowl add 1 cup of melted ghee and mix into a smooth and lump free mixture.
Keep it ready.
Next take sugar and water in a thick bottomed kadai or nonstick pan.
Cook on medium  low flame stirring continuously till it reaches a 1 -string consistency.
Now pour the besan ( kadale hittu) mixture into the sugar syrup,keep stirring.
Mix well.
Once its combined well ,add a laddle full of melted ghee and stir well.
Once the ghee is completely incorporated with the mixture add one more laddle full of ghee and keep stirring continuously.
Continue this step until all the ghee is added.
Mixture starts getting thick and smooth and bubbly.

Now keep cooking and stirring until the mixture starts to leave the side of the kadai.
( you can check by pouring a spoonful of mixture to a small plate,and roll between your fingers,it forms a ball without sticking,then its done)
At this stage turn of the heat and immediately pour the mixture into the tray.
Pat and spread evenly.
Allow it cool for 1 hour.

 Once completely cooled,Unmould and cut into desired shape and size.( rectangular,diamond,square) 
Now delicious,soft mysore pak is ready which melts in mouth.
 This is the traditional way of doing Mysore pak.
