Rave payasa (sooji kheer)
Ingredients
Chiroti Rave ( fine rava// sooji // semolina)—1/4 cup
Jaggery powder ( Bella //gud)—1/3 cup
Milk—3 cups
Water—1 cup
Ghee—2 tablespoon
Cashews (godambi)— 1 tablespoon
Raisins —(drakshi)— 1 tablespoon
Cloves (lavanga)—5 to 6
Cardamom pods (ellaki//elaichi)—4
Saffron strands (kesar//kesari)—1 pinch
Method
Heat 1 tablespoon of ghee in a pan or kadai,add in cashews and raisins and roast them until cashews turns brown add raisins puffs up.
Transfer them to a plate or cup and keep it aside.
Powder cardamom and keep it ready too.
Boil milk in a pan adding saffron and keep it ready .
Take rave in the same pan,add in cloves and roast it on low flame till it warms up and turns aromatic.
Do not over roast it and do not let it change its colour.
Now add water slowly on low flame stirring continuously.
Let it cook for few seconds,then add jaggery powder,hot milk and mix well.
( adding hot milk is important otherwise it gets curdled)
Bring it to boil stirring continuously.
Once boiled add in powdered cardamom and fried cashews and raisins.mix well.
Switch off the stove.
This payasa will be thick in consistency.
Serve the rave payasa either hot or cold.
