Godhi hittina sajjige ( wheat flour halwa)

 

Ingredients 

Wheat flour (atta//godhi hittu)—1 cup
Sugar—1 cup
Pure ghee (tuppa)—1 cup
Water—2 cups
Cashews (godambi)—2 tablespoon chopped to pieces 
Raisins (drakshi)—2 tablespoon 
Cardamom pods (ellaki//elaichi)—3
Cloves (lavanga)—3
Saffron strands (kesar//kesari)—1 pinch

Method 

Take sugar and water in a  sauce pan or vessel .
Heat  the pan on medium flame and stir the solution so that all the sugar dissolves completely.
Stir the sugar solution till it begins boiling.
Switch off the stove.
( we don’t need one string consistency)

Now heat one tablespoon of ghee in a kadai or pan,add in raisins and cashews.
Fry until cashews turns brown add raisins puffs up. Transfer to a plate and keep it aside.
Powder cardamom and keep it ready.

Now heat one cup of ghee in the same pan or kadai ,when it dissolves add the wheat flour, cloves and saffron. Stir and mix it with ghee.

Now start cooking on low flame stirring continuously.
Cook till the colour gradually changes into a golden brown and give a good fragrance. It may take 13 to 15 minutes, this is very important step.
 
At this stage add the sugar water slowly ( on low flame) and cook till it absorbs all the water.
( in the beginning it looks watery but within few minutes it thickens ).
Cook for few minutes until whole mixture becomes one mass.
Switch off the stove.
Add in powdered cardamom powder and fried nuts. Mix well.
Now delicious sajjige (halwa ) is ready to serve. Serve hot.
