Hotel style thondekayi ( tindora) palya



 Ingredients 

Thondekayi (tindora// ivy gourd)—1/2 kg

Fresh grated coconut—1/4 cup
Jaggery powder (Bella//gud)—1 tablespoon 
Salt —to taste

Ingredients for seasoning (oggarane)

Sasive (mustard seeds)—1 teaspoon 
Jeera (jeerige//cumin seeds)—1 teaspoon 
Channa and urad dhal (uddina belle and kadale belle)—1 tablespoon each
Curry leaves (karibevu//kadipatta)—few
Turmeric powder (arisina//haldi)—1/2 teaspoon 
Oil—4 tablespoon 

Ingredients for masala powder 

Kadale belle ( channa dhal)—1 tablespoon 
Uddina belle (urad dhal)—1 tablespoon 
Sasive ( mustard seeds//rai)—1 teaspoon 
Jeera (jeerige//cumin seeds)—1 teaspoon 
Menthya kaalu (methi dana//fenugreek seeds)—1/4 teaspoon 
Hing (asafoetida//ingu)—1/2 teaspoon 
Dry red chillies (bydagi)—5 to 6
Oil—1 teaspoon 

Hunase hannu (imli//tamarind)—small lemon size 

Method 

Wash and cut the thondekayi into length wise pieces.

Pressure cook thondekayi for 3 whistles adding water on medium flame.
Once the pressure reduces open the lid of cooker and drain water from thondekayi.

Now take the ingredients listed for masala powder in a pan ,roast for a couple of minutes until they turn aromatic.
Keep on stirring while roasting.
 
Add tamarind in the end after masala is roasted.
Let this masala cool completely.
Then transfer the masala into a mixer grinder jar and powder coarsely.

Add grated fresh coconut and just pulse the masala without adding water.

Now to prepare palya

Heat 4 tablespoon of oil in a kadai or pan,once’s hot enough add 1 teaspoon of mustard seeds (sasive),jeera(jeerige//cumin seeds).

When they stop spluttering add 1 tablespoon of kadale belle (channa dhal),uddina belle (urad dhal), few curry leaves (karibevu//kadipatta )
And saute for a while.
Add in turmeric powder (haldi// arisina)

Now add in ground masala powder and jaggery powder and saute for a minute.
Add in cooked thondekayi,and salt and mix well.
Let it cook on low  flame for a while keep stirring.( you can add little water if you feel its dry)

Now turn of the flame.
Now delicious thondekayi palya is ready to serve.

Serve with hot  cooked rice ,chapattis,rotti .
