Traditional muchore recipe ( hesaru belle chakli)
Ingredients
Hesaru belle ( moong dhal)—1/2 cup
Rice flour ( akki hittu)—1 1/2 cup
Jeera (jeerige//cumin seeds)—1 tablespoon
Asafoetida (hing//ingu)—1 teaspoon
Oil—2 tablespoon
Salt—1 teaspoon
Water—1 3/4 cup( or little more as required)
Ghee—1 teaspoon
Oil—for deep frying

Method
Take moong dal in a pressure cooker add ghee and roast on low medium flame until moong dal turns aromatic and changes to light brown colour.
Now add 1 1/2 cup water and pressure cook on medium flame for 4 to 5 whistles.
Once the pressure reduces open the cooker lid and mash the moong dal while its hot to a fine paste.
Keep it aside.
Let it cool
Heat oil in a laddle .
Now in a large mixing bowl or plate take rice flour,jeera,hing,salt and boiled mashed dal.
Add in hot oil.
Mix well .
Now add enough water slowly and knead to a soft smooth dough.
Knead for a few minutes.
Meanwhile heat oil in a pan or kadai on low medium flame.
Grease the chakli mould ,fill the muchore dough in it and close .
Press the 4 to 5 muchore on parchment paper and keep it ready.
Or else you can even directly press muchore in hot oil .its easy that way.
Once the oil is hot enough drop the muchore in hot oil and fry till they turn golden brown and crispy by flipping on both sides on low medium flame.
Once done remove from oil and transfer onto a kitchen tissue or colander.
Fry rest of the muchore in the same way.
Let it cool completely.
Store in an airtight container.
