Traditional chakli recipe
Ingredients
Uddina belle ( urad dhal// black gram dal)—1/2 cup
Rice flour( akki hittu)—3 cups
Jeera (jeerige//cumin seeds)—1 tablespoon
Asafoetida (hing//ingu)—1 teaspoon
Salt—1 1/2 teaspoon
Oil—3 tablespoon or little more
Water—2 cups( approximately)
Oil—for deep frying
Chakli ( muruku)press
Method
Wash the uddina belle and add 1 1/2 cups of water to it and pressure cook for 4 to 5 whistles on medium heat.
When the pressure reduces open the lid of cooker and while the dal is hot mash it thoroughly to smooth paste or blend in a blender.
Do not add any water.
Keep it aside.
Let it cool
Now take the mashed dal in a wide bowl or plate,add in rice flour ,salt,jeerige ,hing.mix well.
Heat oil also and pour it to the above mix.
Now add little more water Slowly (1/2 cup or as required) and make a smooth,soft dough.
Add the water carefully.
Heat the oil in a kadai or pan on medium low flame.
Now fill the dough into greased chakli moulds and press chakli on a parchment paper or plastic sheet.
Press 5 to 6 chaklis or more and keep it ready.
When the oil is hot enough drop 3 to 4 chaklis slowly at a time and deep fry on both sides by flipping them.
When done ( lightly golden brown)take them out and transfer them onto a kitchen tissue or paper or colander.
Repeat the same procedure for remaining dough.
Now crispy chaklis are ready to serve.
Cool the chaklis completely and store it in an airtight container.
