Quick easy aloo palya ( subji)

Ingredients 

Aloo( alugedde//potatoes)—6 to7 medium sized .

Dry masala powders 

Red chilli powder—1 teaspoon 
Jeera powder—1 teaspoon 
Coriander powder—( dhania powder)—2 teaspoon 
Garam masala powder—1 teaspoon 
Red chilli flakes—1 teaspoon 
Corn flour or maida —1 tablespoon 
Turmeric powder (arisina//haldi)—1 teaspoon 
Asafoetida (hing//ingu)—1 teaspoon 


Salt— to taste
Sugar—1 teaspoon 
Kasoori methi leaves —3 tablespoon 
Coriander leaves paste or very finely chopped coriander leaves—3 tablespoon 
Water—1/4 cup

For seasoning (oggarane)

Oil—3 tablespoon 
Jeera (jeerige//cumin seeds)—2 tablespoon 
Mustard seeds (sasive//rai)—1 teaspoon 
Menthya kaalu ( methi dana//fenugreek seeds)—1 teaspoon 
Dhania seeds (kothambari bija//coriander seeds)—1 teaspoon 
Curry leaves (karibevu//kadipatta)—few

Method 

Wash and chop aloo into halves and boil aloo in a pressure cooker for 2 to 3  whistles.

Once the pressure reduces open the lid and drain water and wash under cold water.
Peel the skin 

Heat oil in a kadai or pan,once hot add sasive,jeerige,dhania seeds,menthya seeds and karibevu.
Sauté on medium flame.
When they stop spluttering add all the dry masala powder together and sauté them for a minute.

Add in boiled aloo ,salt,sugar and toss them well in spices adding 1/4 cup of water.
Add kasoori methi,coriander leaves paste and mix well and cook for few more minutes.
Since the aloos are already boiled it doesn’t take long to cook.

Switch off the stove.
Transfer to a bowl.
Simple ,easy tasty aloo palya is ready to serve.
Serve with chapattis,roti.
 
You can use this  palya as filling For bread toast.
 
Actually there is no specific measurement for this recipe you can add spices according to your taste and spice level.
