Gobi manchurian
Ingredients
Cauliflower ( gobi)—small one ( 1/2 kg)Onions—2 medium
Green chillies (hasiru menasina kayi)—2 to 3
Garlic pods(belluli)—10
Ginger(shunti)—2 inch piece
Coriander leaves (kothambari soppu)—1/2 cup chopped
Maida flour—1 cup
Corn flour—1/2 cup
Tomato ketchup—2 tablespoon
Red chilli sauce—2 tablespoon
Vinegar (white)—1 tablespoon
Corn flour— 1 tablespoon
Water—1 cup
Black pepper powder—1/2 teaspoon
Red chilli powder —1 tablespoon + 1/2 teaspoon
Turmeric powder—1/2 teaspoon
Salt to taste
Oil—for deep frying
Method
Clean cauliflower and cut the florets and immerse in salt water or vinegar .And let it rest for 4 to 5 minutes and drain water completely,after rinsing them well few times.
Chop onions,ginger,and garlic into small pieces.
Slice green chilli and keep it ready.
Now boil water in a vessel or pan,once’s it starts boiling add 1 teaspoon of salt and turmeric powder and switch off the stove.
Add chopped cauliflower florets into hot water.
Let it rest for 2 to 3 minutes.
Then drain water completely.
Now prepare for paste(Batter)
Take maida flour,corn flour,salt,red chilli powder in a Mixing bowl .
Add water little by little and make a thick batter.
The batter must be smooth ,not runny .
Add cauliflower florets to this batter and mix them well with hands and coat them well.
Now to fry the cauliflower
Heat oil in a kadai or pan,on medium flame,once hot enough,begin to add the florets gradually,one by one in hot oil
Fry them for 3 to 4 minutes ,keep stirring .
Remove them and drain on a kitchen tissue.
Fry the florets in batches.

Now for making manchurian sauce
In a mixing bowl ,take 1 tablespoon of corn flour,red chilli sauce,ketchup,black pepper corn, 1/2 teaspoon red chilli powder,vinegar mix well adding 1 cup of water.
Heat 2 tablespoon of oil in a pan,add chopped ginger,garlic and green chillies and sauté on medium flame for a second.
Add chopped onions and fry till onions turns soft and translucent.( You can add one finely chopped capsicum at this stage it's optional)
To this add the above sauce mix and cook for a while until the sauce thickens.
Now add the fried cauliflower florets and mix well on high heat.
Mix very well ensuring that the sauce coats the cauliflower florets well.
Switch off the stove.
Garnish with chopped coriander leaves and serve hot.
