Stuffed mango kulfi


Ingredients

Mangoes— 5 to 6 

Ingredients for kulfi stuffing 

Milk (full cream)—3 cups
Condensed milk ( milk maid)—1/4 cup or to taste
Milk powder—1/2 cup
Fresh cream—1/2 cup
Saffron strands (kesari//kesar)—1 big pinch
Cardamom pods (ellaki//elaichi)—3 
Dry fruits —badam ( almonds), cashews ( godambi)—2 tablespoon each ,( you can use pistachios too).

Method 

Grind the dry fruits along with cardamom pods to a coarse powder in a mixer grinder jar.

Take the milk in a thick  Bottomed pan or nonstick pan,let it boil on medium flame.
When  milk starts boiling add milk powder and mix well,keep stirring continuously.
Add cream and mix well.
Then add saffron strands,powdered dry fruits and let it cook for 5 to 6 minutes.
Switch off the stove.
Remove from stove and let it cool completely.

Now prepare the mango fruit for stuffing 

Wash the mangoes,wipe it dry .
Do not peel the skin.

Cut off the top of the mango fruit.
Slowly and carefully,using a knife loosen the seed little by little.
And pull out the seed with your hand carefully.
Remove the pulp from seed and add back to the empty mango hole.

Place the mango in side a glass Or cup so it stands upright.

Now fill kulfi mixture in the cavity fully.( almost till top)
Put the mango cap back and  place the glass with mango in freezer.

Let the kulfi set for 4 to 5 hours 

Once set or when kulfi has gotten almost solid,remove from freezer,gently peel the skin of mango using a peeler.
Cut the mango into pieces and serve stuffed kulfi immediately.

Garnish with dry fruits and serve.
