Mango kulfi
Ingredients
Mangoes—4 to 5 (or puree —2 cups)
Milk( full cream)—3 cups
Condensed milk ( milk maid)—1/4 cup
Milk powder—1/2 cup
Fresh cream--1/2 cup
Saffron strands ( kesari //kesar)—1 big pinch Fresh cream--1/2 cup
Cardamom pods (ellaki//elaichi)—3
Dry fruits —badam( almonds),cashews( godambi)—2 tablespoon each.( you can even add pistachios)
Method
Wash and peel the skin of mangoes and chopp them.
Blend the chopped fruits in a mixer grinder jar or blender to a smooth purée.
Grind the dry fruits along with cardamom pods to a coarse powder.
Take the milk in a heavy bottomed pan or non stick pan,let it boil on medium flame.
When milk starts boiling add milk powder and mix well.
Add in condensed milk and mix ,keep stirring.
Add cream keep stirring,then add saffron strands,powdered dry fruits and mix well.
Let it cook for 5 to 6 minutes.
Switch off the stove.
Remove from stove and let it cool completely.
Once it has cooled down completely add the mango puree and mix well until well combined.
Transfer the mixture into kulfi moulds or glass cups or plastic cups.
Cover with aluminium foil and make a slit in the centre and insert ice cream sticks and place in the freezer to set.( preferably overnight)
Once set unmould and serve with pistachios topping.
