Mango kesari bhath
Ingredients
Mango puree( mavina hannu pulp )—1/2 cup
Sugar—little less than 1/2 cup
Chiroti rave (fine sooji//semolina)—1/2 cup
Ghee—3 tablespoon
Saffron strands (kesari//kesar)—few strands
Cardamom pods (ellaki//elaichi)—2
Cloves (lavanga)—2
Drakshi (raisins)—1 tablespoon
Godambi (cashews)—1 tablespoon
Water—2 cups
Method
Heat 1 tablespoon of ghee in a pan or kadai,once’s hot add drakshi,godambi,fry on low heat until raisins puffs up and cashews turns to light brown.
Transfer to a plate and keep it aside.
Keep the same pan back on stove ,dry roast rave Along with cloves on low flame .
Fry until rave slightly changes the colour and nice aroma comes from it.
Transfer to a plate and let it cool.
Now boil water in the same pan ,when it starts boiling add mango pulp and saffron strands
Once it starts to boil,Now add the roasted rave slowly by turning the heat to low.
Keep stirring continuously so no lumps are formed.
Cook it on low flame for a minute.
Now add sugar and and ghee .mix well.
Let it cook for 2 to 4 minutes.
Switch off the stove.
Add crushed cardamom powder and fried cashews and raisins.
Mix well.
Now delicious mango kesari bhath is ready to serve.
